A 24-seat restaurant hidden down an alleyway, Ed and Laura Verner’s Pasture is small but perfectly formed, with lots of blond wood and tiles the colour of slate. The couple’s extensive travels in Scandinavia, South Africa and Japan, including experience at Michelin-starred restaurants, combine with an appreciation for local wild and heritage ingredients, which are often presented as fermented memories. To sit at the pass is to be mesmerised by the rhythmic bustle around its star feature: a brick, open-fire hearth. It’s easy to miss the adjacent high-tech induction hob, but a combination of the two provides the chefs with ultimate versatility. Savour the bread course — rye-wheat sourdough is served warm from the oven with tangy cultured butter — and be wooed by handmade juice and natural wine-matching, presented earnestly and poetically.
